Cooking Directions

  • STEP 1.Peel and cut the raw mangoes into small pieces.
  • STEP 2.Cut the eggplant into thin slices.
  • STEP 3.Heat oil in a pan and add mustard seeds, cumin seeds, and dried red chilies.
  • STEP 4.Add the raw mangoes and eggplant slices to the pan and sauté for a few minutes.
  • STEP 5.Add turmeric powder, red chili powder, salt, and sugar to the pan and mix well.
  • STEP 6.Cover the pan and cook on low heat until the mangoes and eggplant are soft and cooked.
  • STEP 7.Garnish with fresh coriander leaves and serve hot with rice or roti.
