A delicious and nutritious one pot preparation of bajra (pearl millet) cooked in curd with leafy greens like bathua (cheel bhaji) or palak (spinach) or methi (fenugreek) and flavoured with an aromatic tempering of asafoetida (hing), red chilli and turmeric (haldi).A unique combination made into a `daal' like preparation with spinach, besan and moong dal.

Ingredients for Aalan Saag Recipe

  • As required Main Ingredients
  • 1 cup Bathua
  • 2 cup Water
  • 1 cup Curd
  • 3 teaspoon Besan
  • 1 teaspoon Salt
  • 1 pinch Citric acid
  • 1 cup Bajra
  • As required Ingredients for Tempering
  • 2 tablespoon Ghee
  • 1 teaspoon Asafoetida
  • 1/2 teaspoon Red chilli powder
  • 1/2 teaspoon Turmeric powder

Directions: Aalan Saag Recipe

step 1

  • STEP 1.wash and pick 1 handful (1 cup) of bathua (cheel bhaji).
  • STEP 1.Finely chop the greens by hand or using an electric chopper. in a pressure cooker add 2 cups of water, 1 cup of curd, 3 tsp besan (gram flour), 1 tsp salt anda pinch of citric acid (taatri).
  • STEP 2.Using a blender, blend to get a smooth consistency. Add 1 cup of bajra(pearl millet) and mix well. Now put the cooker on high heat and let it come to a boil , stirring continuously. The contents will thicken.
  • STEP 3.Add the chopped green and mix well. Pressure cook for 3 whistles on high heat and turn off the heat . Allow the cooker to cool . Open and mix well.
  • STEP 4.For the tempering ( tadka ) in a pan heat 2 tsp ghee , 1 tsp asafoetida (hing) , 1/2 tsp red chili powder , 1/2 tsp turmeric (haldi) powder.
  • STEP 5.Pour the tempering over the aalan swag and serve hot.
