This is a really flavoursome lamb dish that's cooked with whole pearl shallots for added texture and flavour. The gorgeous little onions add a warming sweetness when fried. Once they are all wrapped up in the deeply hearty flavour of masala sauce they add a delicious bite and crunch to the dish.

  • 5 gram Unsalted butter
  • 50 gram Mini shallots or pearl onions, peeled
  • 1/4 tablespoon Vegetable oil
  • 1/4 Bay leaf
  • 2.50 Cloves
  • 2 Cardamom
  • 2 Dried chillies
  • 1 centimeter Stick cassia bark
  • 1/2 Onions finely sliced
  • 1/4 teaspoon Turmeric
  • 1/4 teaspoon Salt
  • 1.50 Garlic cloves, sliced
  • 3/4 tablespoon Ginger, grated
  • 50 gram Tinned tomatoes
  • 1/4 kilogram Diced leg of lamb or neck fillet
  • 1/2 teaspoon Garam masala
  • 1/2 teaspoon Coriander seeds, crushed
  • 0.13 teaspoon Mace powder
  • 1/4 teaspoon Cumin seeds crushed
  • 1/2 teaspoon Black peppercorns, crushed
  • As required Handful of coriander leaves, chopped
  • 1/2 teaspoon Ginger, finely shredded
