  • STEP 1.Prepare the vegetables by washing and cutting them into bite-sized pieces.
  • STEP 2.Blanch the bean sprouts, cabbage, and long beans in boiling water for a few minutes until they are slightly tender.
  • STEP 3.In a blender, combine peanuts, garlic, chili, tamarind paste, palm sugar, and a little water. Blend until smooth to make the peanut sauce.
  • STEP 4.In a large bowl, mix together the blanched vegetables and the peanut sauce until well coated.
  • STEP 5.Serve the karedok chilled and garnish with fried shallots and lime wedges.
  • STEP 6.Enjoy the karedok as a refreshing salad or as a side dish with rice or grilled meat.
