Bamboo chicken is an oil free and nutritionally rich dish.

  • 100 g Boneless chicken
  • 1 Tsp Curd
  • 1/2 Cup Chopped onion
  • 1 Tsp Chopped green capsicum
  • 1.50 Tsp Green chutney
  • As Required Turmeric powder
  • 1 Tsp Homemade chicken mashala
  • As Required Salt
  • As Required Kashmiri red chilli powder
  • A Few Drops Lemon juice
  • 1/2 Pieces medium size bamboo
  • 1/2 Pieces chapati size dough
  • As Required Aluminium foil

  • STEP 1.Green chutney :-1 cup coriander leaves, 2 teaspoons mint leaves, ginger 1 inch, garlic 5 cloves, 2 green chillies,chopped raw mango 1 teaspoon, salt according to your taste, little water,grind all ingredients nicely and make a paste. Homemade chicken mashala:-2 teaspoons coriander seeds, 1 teaspoon cumin seeds, 1 bay leaves,4 cardamoms, 1 inch cinnamon, 6 cloves, 10 black pepper, 1 black Cardamom, 2 strands mace,very small piece of nutmeg. Dry roast all ingredients and make a fine powder. Chicken marination:-in a mixing bowl add 200g chicken (1 inch cut),lemon juice, curd, green chutney, few pinch of turmeric powder, half teaspoon kashmiri red chilli powder,chicken mashala, salt(according to your taste), chopped onions and capsicum, mix all ingredients properly, cover and leave it for 1 hour. Stuff the chicken inside bamboo and seal with chapati dough and aluminium foil. Cook on a medium flame on a gas stove for 45 minutes by rotating on all sides. When done wrap a clean small cloth around it so that it's easy to handle. Tap the bamboo to remove the chicken. It's ready to serve.
