I have never quite understood what comprises a typical chaat. In some parts of India simple boiled cubes of sweet potato with a drizzle of lemon juice is good enough to be called Shakarkandi ki ‘Chaat’, while something as elaborate as a Raj Kachori, needs to have puffed poori, a dash of sweetened yoghurt, a mix of chutneys, masalas, julienned beetroot and more to merit a spot in the illustrious league. With time I realised that you cannot really enjoy Indian street food with ‘set definitions’ and ‘categories’ in mind. To appreciate its wide gamut, you need to surrender and be slightly more open-minded.
