Look For The Colour
Fresh paneer should have a clean white and a bit creamy colour. Avoid pieces that appear to be yellowish, grey or have uneven dark patches, particularly on the edges. A little variation can occur depending on the milk used, but clear discolouration may suggest that the paneer is no longer at its best.
Look At The Texture
Press the paneer gently if you are buying it loose. It should feel soft and moist but still hold its shape nicely. Fresh paneer should not feel too hard, rubbery or slimy. If the surface feels a bit sticky or unusually slippery, it is better to go for another piece.
Give It A Quick Smell
