Mint
Mint or pudina is one of the most effortless herbs that you can start with, especially if you are new to gardening. It grows fast and can survive well even in small pots with regular watering and some sunlight. With proper sunlight and air, it grows rapidly. There is a different kind of joy in plucking fresh mint to use in chutneys, raita, drinks and salads.
Coriander
Coriander, also known as dhaniya, is another useful herb for a kitchen garden, as it can be used for both its fresh leaves and seeds. Sow the seeds directly in loose, well-drained soil and then place the pot where it gets at least 4 to 6 hours of direct sunlight. Keep the soil a bit moist and snip fresh leaves as it grows for dals, curries and chutneys.
Curry Leaves
A curry leaf or curry patta plant can be a rewarding addition to your home garden, especially if you make sabhars and coconut chutneys frequently. Grow it in a big pot that has well-drained soil and good water management, and place it in a place where it gets plenty of sunlight. Water only when the topsoil feels parched, and also avoid watering too much. Once it is well grown, harvest a few leaves at a time for tempering sambhar and curries.
Basil
Basil, more commonly known as tulsi in Indian homes, is a beginner-friendly herb that thrives in a sunny spot with regular watering. Plant it in fertile, well-drained soil and place it in a pot where it gets several hours of sunlight. Water when the soil starts to dry, and pinch the growing tips regularly to promote bushier growth. Fresh basil leaves can be used for pasta, pizzas, salads, and sauces.
Lemongrass
Lemongrass is a good option if you want a herb that is useful in the kitchen and also very easy to maintain. Plant it in a big pot with well-drained soil. Water it on a regular basis without letting the soil remain soggy, and harvest the outer stalks from the base once the plant is fully grown to be used for teas, soups and curries.
