Winter Special: We Got Hot And Sour Chicken Soup Recipe From Kylin, Who’s Hungry?

There are very few things as pleasurable as curling up in our blanket with a hot bowl of soup in this weather. It is chilly and perfect for all things hot, but we are too lazy to cook something elaborate; hence, all we can think about is soup. Creamy, clear, cheesy, hot, sour, saucy, all kinds of soup. In our quest to find the ideal soup, we dug out this recipe of Hot and sour chicken soup from Kylin, Vasant Kunj. The premier Asian fine-dine restaurant is making our winter a tad better with this simple and classic recipe they shared with us.

Hot and sour soup, is a fiery Chinese soup that is one of the most beloved soups in the world. Sure, you can even get those pouches and premix, where all you have to do is mix in the powder with water and get your instant soup. But these instant soups cannot even hold a candle to soups made from scratch at home. 

So, what is a Hot and Sour chicken soup, you ask? As the name suggests, it is spicy and to undercut the heat, a good amount of souring agents are also used. Shredded chicken is cooked with fresh veggies such as cabbage, capsicum, carrots, beans, ginger, garlic. Great use of black pepper, red chilli sauce, soy sauce, and vinegar adds a lot of drama to this simple-looking dish.

Ingredients: 

  • Baby Corn 10 gm 
  • Bamboo Shoots 8 gm 
  • Black Mushroom 3 gm 
  • Broccoli 10 gm 
  • Broth Powder 5 gm 
  • Carrot Yellow 5 gm 
  • Chicken Breast Boneless 20 gm
  • Chilly Oil 3 ml
  • Corn Flour 7 gm
  • Dark Soya Sauce 5ml
  • Egg 1
  • Garlic Peeled 2 gm 
  • Mushroom 10 gm 
  • Salt 2 gm 
  • Sesame oil 2 ml 
  • Silken tofu 10 gm 
  • Stock 250 ml 
  • White Pepper Powder 2 gm 
  • Tobasco Sauce 2 ml 
  • White Vinegar 5 ml 

Method 

1. Add chicken stock in a hot wok, followed by star anise, salt, broth powder, sugar, chilli paste, vinegar and all veggies and chicken. 

2. Boil till all vegetables are nicely cooked. 

3. When the soup has boiled, balance with potato starch. 

4. Add soya sauce, finish with sesame oil. 

5. Pour in a bowl, relish.
