Winter Special: Creamy Carrot Soup

Seasonal and healthy vegetables, Carrot is beneficial to consume for good health. This vegetable is mainly available during winter in the market. This vegetable can be served in many ways such as carrot halwa, gajar ka achaar, carrot burfi, gajar ki sabzi and many more. Another way to serve it is as Carrot Soup. It is a super healthy and easy-to-prepare recipe.  

Soups can also be prepared with a variety of vegetables. Each of them has a delicious flavour. This carrot soup is light and has a slightly sweet flavour. It can be prepared without coconut milk as a vegan recipe also. 

Here’s how to prepare winter's special, creamy carrot soup at home.

Cooking Time: 30 minutes

Servings: 3

Ingredients: 

  • 1 tsp Olive Oil 
  • 1/2 medium-sized Onion - finely chopped 
  • 2 cloves of Garlic - minced 
  • Small piece of Ginger 
  • 1/4 tsp Chili Flakes 
  • 450 grams of Carrot - peeled and sliced up 
  • Vegetable Stock 
  • Pinch of Salt 
  • Coconut Milk 
  • Salt and Pepper as per the taste 

Method:

  • Take a pan and put olive oil. Heat the oil on a low flame
  • Next, add the onion and saute it in the olive oil. Cook the onion until they change to brown. Once done, include the minced garlic as well as grate a small piece of ginger into the oil 
  • Now put the chilli flakes to it followed by carrots. Coat the carrots well with olive oil and other ingredients. Stir all the ingredients well and let them cook for a while
  • In this step, add the vegetable stock to the carrots slowly as well as a pinch of salt. Now mix all the ingredients 
  • Once done, lower down the flame and cover the pressure cooker with a lid. Once you put the lid on the cooker, cook it on a high flame and keep cooking it until 2 whistles 
  • The moment the steam escapes completely from the pressure, take off the lid and let it cool down for at least 10 to 12 minutes 
  • Now blend the carrots in a mixer 
  • Once done, put the carrots back on the heat and cook them slightly with coconut milk. Put pepper and salt as per your taste and mix well
  • Finally, tasty and healthy carrot soup is ready. Garnish it with coriander leaves and serve hot along with bread crumbs

Important Points To Note:

  • Both red carrots and orange carrots can be used to prepare the soup. Although it is preferred to use red carrots to bring out the best flavours
  • Always use fresh and tender carrots to prepare the soup. Avoid using fibrous and hard carrots
  • Water can also be used instead of vegetable stock
  • You can include seasonings and spices of your choice to prepare the soup. But don’t overdo it with spices otherwise the soup will lose its actual flavour of carrot 
  • Leftover carrot soup can be refrigerated and then used the next day. Warm it well before serving and if it becomes thick, put some water and reheat it
