Coconut cream and strawberries are combined to create this decadent dairy-free strawberry pudding. It's a straightforward, solid dessert that will satiate your palate and, as a bonus, offer you a jolt of energy. Lime gives it a taste boost and creates a pleasant mix of sweet and sour. Add dairy-free coconut whipped cream or dairy-free chocolate chips to the pudding for an additional special treat. It's ideal for special events, but it's also simple enough to prepare every day.

Here's how you can make this yummy dessert:


 3 cups fresh strawberries

 3 tablespoons maple syrup

 1 tablespoon lime juice

 1/2 teaspoon lime zest

 1/8 teaspoon salt

 1 cup coconut cream


 Blend all the ingredients together in a blender until they are smooth and creamy. Place the mixture in the refrigerator and cool for about an hour. Distribute among ramekins or small bowls.
