Wednesday nights are reserved for pizza parties. Try this best vegan pizza recipe loaded with veggies, jalapeno, and creamy cashew sauce. It’s a perfect party snack without using any non-vegan items such as cheese, dairy products, even yeast. Here is the vegan pizza recipe for you to enjoy your Wednesday nights!

Ingredients For Crust Kneading:

  • 1 cup of almond and cornflour 
  • ½ teaspoon of baking soda 
  • ½ teaspoon of baking powder 
  • 1 tablespoon of olive oil
  • Pinch of salt 

Ingredients for sauce: 

  • 1 tablespoon of olive oil 
  • 2 tomatoes (medium size copped)
  • ½ teaspoon salt 
  • ½ teaspoon sugar 
  • 4-5 garlic cloves (fine chopped)
  • ½ tablespoon oregano 
  • ½ tablespoon basil (dried/ fresh)
  • ½ tablespoon black pepper 
  • ½ tablespoon chilli flakes

Ingredients for toppings: 

  • Broccoli (chopped)
  • Onion (sliced)
  • ½ jalapeno (thinly sliced) 
  • Mushroom (optional)
  • Bell peppers (optional)
  • 1 ½ cup of a Cashew cream

Procedure:

  • For kneading a dough: Combine all the dry ingredients in the kneading bowl, add olive oil and start mixing the dough. Add water at interval time. Once it is done, brush olive oil on the dough, keep that aside for 30-45 minutes, and cover this with cling film. 
  • For the sauce: Take a saucepan, add olive oil. Once it is heated, add garlic, tomato puree, sugar, salt, oregano, basil, black pepper, and chilli flakes. Give a good stir. Simmer it for 5-7 minutes. And your pizza vegan sauce is ready. Transfer it into a bowl. 

For the cashew cream:

  1. Soak 1 cup of cashews for 15-20 mins after mixing in a blender. 
  2. Add soaked cashews, ½ tablespoon of olive oil, 1 fine of garlic clove, a pinch of salt, and 2 tablespoons of lemon juice (you can replace lemon juice with white vinegar)
  3. Also, you can use ½ teaspoon of mustard sauce for more tang flavour. 
  4. And blend on high to low and vice versa until it blends wholly (smooth and creamy). 

Pizza time: 

  1. Preheat the oven to 180°C. 
  2. Take a baking tray/pan, grease it with olive oil and lightly dust the raw cornflour or semolina flour. 
  3. Divide the pizza dough into equal parts of either 4 small or 2 large portions. Take the divided portion and make a round-shaped thin base.
  4. And transfer into the greased baking tray. Use a fork and prick the dough (this helps crust not to puff up while baking).
  5. Slightly brush the crust with olive oil, and then spread the tomato sauce over it. 
  6. Add your chopped/sliced veggies and pour cashew cream over the pizza. 
  7. Transfer the tray and bake for 25-30 minutes. 
  8. And your vegan pizza is ready to be enjoyed on Wednesday night! 

Takeaway tip: You can add your favourite veggies as toppings and saute them a little before spreading them on the pizza base.
