This fusion cuisine will appeal to both children and adults. Quinoa Cutlets can be made for breakfast, lunch, snacks, or even dinner. This clean snack that is both full and nutritious may be made in about 30 minutes. Serve the cutlets with mint chutney, ketchup or any other dip of your choosing.

Ingredients: (2 Servings)

    1/2 large onion

    1/4 carrot

    1 and 1/2 tbsp gram flour (besan)

    1/2 tsp coriander powder

    Salt as required

    1/2 tbsp vegetable oil

    1/2 cup quinoa

    1/4 capsicum (green pepper)

    2 tbsp cabbage

    1/2 tsp red chilli powder

    1/2 tsp dry mango powder

    1 tbsp coriander leaves

Method:

1.    Give the quinoa 30 minutes to soak. Now thoroughly wash it, add it to the blender, and blend until thick paste forms. If more water is required, add 1-2 tbsp.

2.    In a bowl, transfer the quinoa paste. Add the finely chopped cabbage, onion, carrot, and coriander leaves. Add besan, salt, red chilli powder, coriander powder, and dried mango powder. Make a thick mixture by giving it a nice mix.

3.    Now pour a tbsp of oil into a nonstick pan and heat it up. The mixture is used to form little tikkis, which are then placed in the pan. Cook until a rich golden brown is achieved on both sides.

4.    Serve the cooked cutlets with the dip of your choice once all of them have been cooked.
