This Ultra-Creamy Potato Salad Is Replete With Comfort

Many of us still believe that salad is a concoction of boring vegetables like lettuce, tomatoes, broccoli and dark leafy greens. But those days are gone, thanks to our little-kitchen Eureka moments that we are able to enjoy a plethora of salad recipes that are not only just healthy but are equally unique and amazing. 

Take, for instance, the potato salad. The popular side dish is a common feature in potlucks and picnics. Made with boiled potatoes and a variety of other herbs and condiments, this starchy salad is renowned for its creaminess. It is said that it originated in Germany, from where it spread to Europe, European colonies and variants of the same can be found across Asia too now. 

To add to the list of delectable salads, we bring you the humble recipe of potato salad which is creamy-fleshed with the right amount of hotness provided by mustard, vinegar and black pepper that undercut the heavy creamy flavour of the salad. In my opinion, this dish can easily get the stature of the main dish with its mouth-watering flavours. So, without any further ado, here's the recipe for yummy potato salad. 

We know, potatoes are something you are wary of adding to your 'weight loss' diet, but experts say that ruling out potatoes could be a bad idea as they are indeed a treasure trove of minerals and nutrients. 


  • 2 large potatoes
  • 2 cups water
  • 1 ½ cup light mayonnaise
  • 3 hard-cooked eggs, peeled and chopped
  • ½ cup onion, finely chopped
  • 1 cup scallions, finely chopped
  • 3 tbsp mustard
  • 1 tbsp apple cider vinegar or white vinegar
  • 1 tsp salt or to taste
  • ½ tsp black pepper


1. Take a thick bottom pan and add water into it and let it boil over medium flame for 10-12 mins.

2. Meanwhile, peel the potatoes and chop them in large cubes. When the water comes to boiling add the potato cubes. Cook them until they are soft and tender.

3. Drain the excess water and let the potato cubes cool for a minute.

4. Take a large bowl and add potato cubes, salt, mayonnaise, eggs, onion, scallions, mustard, vinegar and black pepper. Mix all the ingredients together.

5. Cover and refrigerate for at least 1 hour before eating it.
