We all know how amazing chocolate cakes are. No matter which interesting flavour combination you try and make — chocolate and orange, chocolate and walnut, chocolate and strawberry and most common of them all, chocolate and banana cake -- there is a lot left to taste! Do you know which amazing cake has stolen our hearts? The moist chocolate avocado cake! So simple, and yet it comes with an unexpected burst of flavour inside. The addition of avocado obviously has its perks. As avocado has some really healthy fats, making a chocolate avocado cake will be a great way for your kids to enjoy the benefits.

The chocolate avocado cake is a superb choice when you can’t seem to choose which unique cake combination to try. Avocado tastes delicious on its own, but you will enjoy the rich flavour of chocolate that is merged with the awesome goodness of avocado!

Here’s how you can make a chocolate avocado cake —

INGREDIENTS

- 2 cups flour

- 4 tablespoons cocoa powder

- 1 1/2 teaspoon baking powder

- 1 teaspoon salt

- 1 ripe avocado, mashed

- 1 tablespoon instant coffee

- 2 cups water

- 1 teaspoon vanilla extract

- 1 cup sugar

 METHOD

 - In a bowl, mix flour, cocoa powder, baking powder and salt. Set aside.

- In a blender, add avocado, vinegar, vanilla extract and sugar. Don’t turn on the blender yet.

- First, measure 2 cups of boiling water, and add instant coffee to it. Stir it well.

- Now add half of the liquid to the blender, along with the other ingredients.

- Now, blend it all together at high speed, until the mixture is smooth.

- Now carefully pour the mixture into the bowl of dry ingredients.

- Also add the remaining coffee liquid to the bowl of dry ingredients.

- Mix the wet and dry ingredients properly.

- Pour the batter into a cake pan that is lined with parchment paper. Slam the cake pan a few times to release air bubbles.

- Bake at 180 degrees Celsius for 30 minutes.

- Do the toothpick test to see that the cake is baked.

- Transfer cake onto a plate, by placing a plate on top of the cake and turning the cake pan upside down. Allow it to cool down.

- Serve chilled.

- Optional: dust the cake with powdered sugar.
