- 1/2 cup amaranth flour

- 1/2 cup buckwheat flour

- 1 tsp baking powder

- 1/2 tsp jaggery powder

- 1 tbsp flax seeds + 2 tbsp water

- 1/3 cup almond milk

- 1 large banana, peeled

- 5 pitted dates

- 2 tbsp agave

- 2 tbsp olive oil/coconut butter

- 1 tsp apple cider vinegar

- 1 tsp salt

- 2 tbsp maple syrup

- 1/3 tsp ground ginger

- 1/2 tsp bicarbonate soda

 METHOD:

 1. Mix these dry ingredients in a large bowl: brown rice flour, amaranth flour, buckwheat flour, baking powder, jaggery powder, salt, and ginger.

2. Mix all these ingredients together in a blender: olive oil/coconut butter, almond milk, banana, dates, maple syrup, agave, and apple cider vinegar. To make a flax egg, add the flax seeds to water and stir together. Wait for it to take a gel-like consistency. Then add to the blender.

3. Now, combine the dry ingredients with the blended ingredients.

4. In this step, you have to spoon the mixture into doughnut molds and bake them for about 20 minutes. Remember to pre-heat the oven. While baking set the temperature to medium heat.

5. Remove the doughnuts from the oven and set them aside to cool.

6. You can top the doughnuts with some coconut sugar.
