These Cacio E Pepe Cabbage Chips Are A Healthy Snack Solution

Cabbages are a constant in Indian kitchens but so often underutilised. They are full of flavour and deserve to be the star of the show instead of getting lost in the mix of a bhaji. This healthy veggies chip recipe by Carla Lalli Music – of Bon Appetit fame – gives the cabbage its moment in the sun. It combines the classic flavours of an Italian Cacio E Pepe pasta with a healthy twist of cabbage.

Cacio e Pepe is a traditional Italian pasta dish that originated in Rome. The dish consists of spaghetti or other long pasta noodles mixed with freshly-grated Pecorino Romano cheese and black pepper. The name "Cacio e Pepe" literally translates to "cheese and pepper" in Italian, referring to the two key ingredients in the dish. It is considered a simple and rustic dish, typically made with minimal ingredients and minimal cooking time. Cabbage chips are a nutritious and tasty alternative to traditional potato chips. Ingredients

  • 1 head of cabbage
  • 1 cup parmesan cheese, grated
  • 2 cloves garlic
  • Olive oil
  • Salt and pepper to taste

Method

  • Remove the stem of the cabbage and cut it in half.
  • Start separating all the leaves and rinse and dry them.
  • In a bowl, grate the garlic into 3-4 tbsp of oil.
  • Toss the cabbage leaves in the oil mixture and then evenly spread them on a baking tray.
  • Bake at 190 C for about an hour, flipping every 10 minutes until they’re evenly browned and crispy. 
  • Sprinkle the parmesan over the top and toss to coat before serving.
