Cooking a mix of vegetables, starch and protein together in one vessel has been a time-saving way to feed people for as long as humans have been cooking. 

One-pot cooking isn't exactly a new concept for Indians. Biryani is one of the earliest examples of a one-pot. While in the western cultures, when more women started to work outside the home. The trend continued into the 1990s when one-pot cookbooks were marketed to families with two working parents. Suddenly a simple cooking method that had been used throughout history got a rebrand for Americans looking for a fast way to get dinner on the table.

The sheet pan dinner is the latest instalment in the one-pot trend. This kitchen workhorse has recently seen a rise in popularity thanks to social media for a fairly simple reason. A sheet pan, carefully arranged with colourful vegetables and protein is easy to photograph from overhead. So while the terms may vary, one-pot, casserole, sheet pan.

The idea of cooking everything together has undeniable appeal. It is fascinating how every single ingredient can retain its flavour and fragrance and at the same time, complement other ingredients. One pot is a quick solution to elaborated dishes. This mouthwatering one-pot dish is made with broccoli, mushrooms, chicken breasts and scallions and is bursting with flavours. One can make it for themselves or their loved ones, for nobody can be indifferent to this delicious treat. Never cooked a one-pot dish before? Don't you worry. This dish is simple enough for someone who's a beginner. It will leave your guests amazed by your culinary creativity (even if you're new to cooking!).

Ingredients:

3 chicken breasts, cubed

Salt, to taste

Pepper, to taste

1 ½ lb broccoli florets

10 oz mushroom, sliced

3 tablespoons vegetable oil,

Scallions for garnish

4 cloves garlic, minced

1 tablespoon ginger, minced

2 tablespoons sesame oil

½ cup reduced-sodium soy sauce

1 cup chicken broth

¼ cup flour

Method:

In a pan on medium heat, heat 1 tablespoon of vegetable oil. Add chicken, salt and pepper. Sauté till cooked through and browned.

Remove the chicken from the pan and slice the chicken into strips.

Heat another tablespoon of vegetable oil and add mushrooms. Add broccoli florets when the mushroom starts to soften and stir-fry until broccoli is tender. Remove cooked mushrooms and broccoli from the pan.

Add 1 tablespoon of vegetable oil to the pan and saute ginger and garlic until fragrant. Add sesame oil, chicken broth, soy sauce and flour, and stir till smooth.

Add the chicken and cooked mushrooms and broccoli to the pan and stir until cooked thoroughly

Garnish with scallion before serving. Serve immediately with either noodles or rice. Can be kept in the fridge for up to 4 days.
