Tantalising Shrimp Scampi For The Italian In You

This recipe for a quick and easy shrimp scampi is a total crowd-pleaser. The garlic and toasted butter sauce pairs perfectly well with some bread or a hoard of pasta. Whatever you chose to eat this alongside with, we ensure you that it’ll be a dish to remember. We also recommend that you don’t skip the marinade step, the garlic and butter flavours that it results in are truly spectacular. The recipe makes two hearty servings and four small servings, so double the recipe if preparing for several people.

You’ll Need

¼ cup of white wine

1 tablespoon of lemon juice

¼ cup of butter

3 tablespoons of parsley4 garlic cloves

¼ teaspoon of red chilli flakes

salt

3 tablespoons of olive oil

400g of shrimp


Preparation

  1. Grate two of the cloves and thinly slice two garlic cloves.
  2. Peel and devein the shrimp.
  3. Chop the parsley.


Instructions

  1. In a bowl, whisk a third of the oil, grated garlic and salt.
  2. Drop the shrimp and coat in the oil mix.
  3. Let till chill uncovered for at least thirty minutes to an hour.
  4. In a pan, heat the remaining oil and the shrimp mixture and let the shrimp cook. Ensure that shrimp is just barely done.
  5. Remove from the pan and let the excess oil drip off.
  6. Back in the pan, add the garlic and red chilli and let cook.
  7. Follow by pouring the wine and lemon juice.
  8. And continue stirring for a couple of minutes.
  9. Add the butter and cook that as well.
  10. Whisking occasionally, the sauce will thicken.
  11. Add the shrimp back into the pan and let it cook all the way.
  12. When it’s thickened to your liking, stop the heat.
  13. Ladle to a big bowl and garnish with parsley.
