One of our most awaited Hindu festivals, Dussehra, is here. The festival of Dussehra is celebrated all over the country every year with fervour and elation as this day marks the triumph of our Lord Ram over the ten-headed demon king, Ravana. To begin this auspicious festival with utmost zeal and joy, people indulge themselves in preparing Hindu rituals and getting ready to make an impressive selection of palatable delicacies that include a variety of indulgent sweets and snacks. When talking about sweets, Kheer is one such quintessential Indian delicacy that is typically prepared during every festive season. Vermicelli kheer is prepared using milk with vermicelli dipped into it, which is then flavoured using saffron, cardamom and luscious dry fruits. Isn't it true that sweets and festivals go hand in hand? So feel the true essence of festivity with a loving bowl of creamy vermicelli kheer.

Handmade vermilliceli method:

  • Get a large container and add one cup of fine flour into it. Blend it with half a tablespoon of ghee.
  • Knead a firm dough. After the dough is ready, use your fingers to make fragile strands.
  • The handmade strands are then dried up in the sun. It’s these strands that are called vermicelli.

Vermicelli kheer:

Ingredients:

  • Half cup handmade vermilliceli
  • Half litres full cream milk
  • 1 tablespoon ghee
  • Half tablespoon cardamom powder
  • 1-2 tablespoons coconut power
  • Half cup sugar
  • Dry fruits ( raisins, almonds, cashew)
  • 3-5 strands of saffron

Method:

  • Warm a container with ghee and add the vermilliceli into it. Saute for a while and sprinkle some dry fruits over the top.
  • In a saucepan, boil milk and add sugar into it. Once the sugar dissolves, mix it with your handmade vermilliceli. Do add saffron strands along with coconut and cardamom powder.
  • Cook everything for a while till the kheer thickens, and vermicelli turns soft.
  • Once ready, serve hot or cold as per your desire.
