INGREDIENTS: 

For the stir fry

1. 1/4 cup vegetable oil

2. 1 pound boneless chicken breasts 

3. 1/4 cup corn starch

4. 1/2 cup onion chopped into 1/2 inch pieces

5. 1 red bell pepper chopped into 1 inch pieces

6. 1 green bell pepper chopped into 1 inch pieces

7. 25 small dried red chilies

8. 1 tablespoon sichuan peppercorns, optional

9. 1 1/2 teaspoons minced garlic

10. 1 teaspoon minced ginger

11. salt and pepper to taste

For the sauce

1. 3 tablespoons low sodium soy sauce

2. 1 1/2 tablespoons hoisin sauce

3. 1 tablespoon sesame oil

4. 1 1/2 tablespoons brown sugar

5. 1 tablespoon cornstarch

6. 1/4 cup chicken broth

Instructions to make Schezwan Chilli Chicken:

1. Add the cornstarch, salt, and pepper to taste, along with the chicken to a bowl

2. Mix well by tossing

3. In a big pan, heat the vegetable oil over high heat

4. In the pan, arrange the chicken in a single layer

5. Cook each side for 3 to 4 minutes or until golden brown, This step might need to be completed in batches

6. Take the chicken out of the pan, Keep warm by covering. 

7. Add the onion, green and bell peppers, and garlic to the pan

8. Add the chiles and sichuan peppercorns and stir

9. Cook vegetables for 3 to 4 minutes, or until they are tender

10. Cook for a further 30 seconds after adding the garlic and ginger to the pan

11. Add the chicken back to the pan with the veggies

12. Prepare the sauce while the chicken and veggies are cooking. In a small bowl, whisk together all of the sauce ingredients

13. When the sauce has just begun to thicken, add it to the chicken mixture and heat through for 30 to 60 seconds. Serve right away
