Ingredients:

• 2-3 wholegrain bread slices

• 1 cup medium to large tomato, chopped and seedless

• 1 cup cottage cheese (paneer), chopped in cubes

• 2 -3 basil leaves, chopped

• 1 small garlic clove, minced

• ¼ tsp black pepper powder

• 2 tsp extra virgin olive oil

• salt as required

Preparations:

1. On a skillet or non-stick pan, roast the breads until they are golden and crisp

2. Meanwhile, take a bowl and add tomato, paneer, basil leaves, garlic, black pepper powder, salt and drizzle it with some extra virgin olive oil. Mix all the ingredients well and keep it aside.

3. After this, halve the garlic and rub the sliced end of the garlic on each side of the toasted bread. If you like you can also use the garlic oil.

4. Now place the tomato-basil mixture on the bread carefully and spread it evenly to all the sides.
