Revamp your Everyday Eggs with these two simple recipes

Let’s introduce Eggs Benedict and Deviled Eggs in your daily diet. While both of these might seem complicated, if you follow these simple steps, you’ll end up with a breakfast that will not just satiate your quest for eggs but also give it a little bit of edge. These are wonderful for breakfast but you can also enjoy them for lunch on sandwiches.


Eggs Benedict 

This classic American breakfast needs no introduction. It’s creamy, it’s rich and absolutely decadent if done right.

You’ll need 


1.5 tbsp of white vinegar 

2 full eggs + 2 egg yolks

2 toasted muffins (if you don’t have access to American muffins use bagels instead or even regular toast)

2 slices of ham

100g of butter 

1/2 tbsp water

1/2 tbsp lemon juice


Instructions


Hollandaise Sauce 


Place the egg yolks into a bowl set over a pan of gently simmering water (make sure that the bowl doesn’t touch the water) and beat until pale and thickened.

Continue whisking for another 30 seconds while adding the water, salt, pepper and lemon juice.

Melt 75g of the butter in a microwave and add half of that in the yolk mixture to temper while still in the pan.

Add the remaining half of the butter off of the heat.


Assembly


Poach the eggs and toast the muffin. 

On the muffin, swirl on some hollandaise and then add a slice of ham followed by the poached eggs and then add some more hollandaise.



Deviled Eggs 

If you enjoy hard-boiled eggs, this one is for you. These treats are just irresistible and the perfect way to start your day.

You’ll Need


3 eggs

1/8 cup mayonnaise

1/2 tsp white vinegar

1/2 tsp yellow mustard

A pinch of salt

Freshly ground black pepper

Smoked Spanish paprika, for garnish


Instructions 


Hard boil the eggs.

Remove the shells and slice them in half and separate the hardened yolk in a separate bowl.

Mash the yolk until a paste is formed and add the vinegar, mustard, mayonnaise, salt and pepper and mix well.
