Mother’s Day: Chef Saransh Shares His Grandma’s Kadhi Recipe

We are already putting our heads together to come up with creative ways to make Mother's Day extra special for all of the mothers out there. Even if you buy them the most exquisite presents, the one thing that is guaranteed to put a smile on their face is if you prepare an appetising dinner for them or recreate one of their favourite recipes and set it out in a lovely setting. This is the best method to make a woman happy, so if you also want to do something unique for your wife or your mother, this is the way to go. 

Recently, Chef Saransh Goila shared his grandmother's bhindi ki kadhi recipe on social media. His post read,  "Kurkuri Bhindi wali Kadhi Chawal. This is a Goila household favourite. What do you add to your Kadhi that is not a pakodi? This #Delishaaas Bhindi Kadhi reminds me of my grandma and this recipe is dedicated to her and mummy because mother's day is coming soon ❤️"   

Here’s a recipe 

Ingredient: 

For chaas mixture 

2 cups sour curd 

1 tsp turmeric powder 

1 tsp red chilli powder 

3 tbsp besan  

4 cups of water to whisk it  

To cook  

1 tbsp oil

 1 tsp jeera 

½ tsp methi seeds 

½ tsp Ajwain 

½ inch ginger sliced 

For Tadka 

2 tbsp ghee 

1 tsp mustard seeds 

2 green chillies 

A pinch of hing 

6- 8 curry leaves 

1 tbsp coriander, chopped for garnish 

For kurkuri bhindi 

300 g lady finger, halved 

½ tsp haldi  

½ tsp red chilli powder 

½ tsp jeera powder  

½ tsp ajwain 

2 tsp Amchur powder 

3 tbsp rice flour 

3 tbsp besan  

1 tbsp oil

Method: 

In a bowl add the ingredients for chaas and whisk it well by adding four cups of water. Keep it in the fridge to cool. In a big open vessel, heat 1 tbsp of oil. Once hot, add 1 tsp jeera, ½ tsp methi seeds, ½ tsp Ajwain and sliced ginger. Let it get golden brown in colour. Now carefully add the cooled chaas. Keep stirring continuously for 10 to 15 minutes until the oil separates from the sides. Prepare the tadka in a small pan. Add ghee and mustard seeds. Let them splutter, now add the green chillies, hing and fresh curry leaves. Your tadka is ready to be poured over the kadhi. It’s time to add the final touch and make the kurkuri bhindi. In a mixing bowl, add the kurkuri bhindi ingredients and toss them well so that the masala coats them well. Now deep fry them or air fry them as you like.  Add this crispy bhindi to the kadhi and enjoy this delishaaas bhindi kadhi with steaming hot rice.
