Kulcha, Kashmir 

What.s better than to start your day with a gastronomic kick with Kulcha, a Kashmiri morning staple. It's not your typical kulcha, which can be found virtually anywhere in Northern India, but it's a unique invention found only in Jammu and Kashmir. This Kashmiri Kulcha is a baked delicacy that is cooked in a traditional kiln and is created from a mixture of wheat flour and refined flour. It has a delicate texture that is best eaten slathered with butter and served with kaahwa or sheer chai as a side dish.

Akki roti is Kannada for "rice bread." A thin pancake prepared of rice flour, diced veggies, and spices is topped with molgapodi in this unique regional cuisine (gun powder). 

Sattu Paranthas, Bihar 

Sattu paranthas are Bihar's traditional breakfast of choice. Sattu, roasted channa dal flour, and grains are used to make it. The parantha is stuffed with sattu flour, chopped onion, green chillies, ginger, garlic, and ajwain and baked on a tawa before being served with curd. 

It's not just about stuffing our bodies with food; it's about eating intelligently to ensure that we get all of the nutrients we need.
