IPL 2023: Enjoy Gujarati Veg Muthiya As You Watch The Match

The delectable Gujarati Muthiya is a renowned snack that hails from the state of Gujarat, India. It can be either steamed or fried to perfection. This delectable dish is crafted using a harmonious blend of besan, wheat flour, and an array of nutrient-rich vegetables such as dudhi/lauki, methi, and palak. Muthiya is a popular Indian snack that can be eaten on its own or with a dollop of chutney. It has a crunchy outside with a harmonious blend of distinctive flavours and textures, featuring a tender and airy centre complemented by a crispy outer layer. Muthiya is a fantastic source of fibre and protein because it contains the health benefits of vegetables. It's a great snack for morning or afternoon tea, or as part of a Gujarati thali spread.

These delectable treats always have the ideal texture, making us want to eat them all right away. Before the IPL championship match begins, let's get a healthy snack, Muthiya ready to eat. 

Here’s a recipe of veg muthiya made with carrots and lauki by HomeChef Meghna 

Ingredients: 

For Muthia 

1 small piece of Bottle Gourd (Dudhi - cut into small cubes) 

3-4 finely chopped Green Chillies 

1 finely chopped small Ginger Knob 

2 finely chopped Garlic Cloves 

1 small piece of Carrot, shredded 

Finely chopped Coriander Leaves 

1 Lemon Juice 

2 spoon Sugar 

1 tsp Turmeric Powder (Haldi) 

1 tbs Coriander Seeds (Dhaniya) Powder 

1 tbs Oil 

Salt as per taste 

1/2 cup Semolina (Suji) 

1.5 cup Atta with Multigrains 

For Tadka:- 

2 tbs oil 

2 tsp Mustard Seeds (Rai) 

2 tsp White Sesame Seeds (Safed Til) 

1 tsp Asafoetida Powder (Hing) 

Few Curry Leaves 

Method: 

In a mixing jar, take 1 small piece of Bottle Gourd (Dudhi cut into small cubes). Add 3-4 finely chopped Green Chillies. Add a small finely chopped Ginger Knob. Add 2 finely chopped Garlic Cloves. Finely churn and transfer in a mixing bowl. Add 1 small piece of Carrot, shredded. Add finely chopped Coriander Leaves. Add 1 Lemon Juice. Add 2 spoon Sugar. Add 1 tsp Turmeric Powder (Haldi). Add 1 tbs Coriander (Dhaniya) Powder. Add 1 tbs Oil. Add Salt as per taste. Add 1/2 cup Semolina (Suji). Add 1.5 cup Atta.

Combine everything together to form a soft dough (add a little Water if required). Take small portion of this mixture and make cylindrical shape rolls. Grease a food strainer with oil and arrange rolls in it. Keep the strainer in 10 min preheated steamer. Cover the steamer lid with cloth. Cook for 20 min on medium heat. Cut the rolls into pieces once cooled. Further for tadka heat the pan. Add 2 tbs oil. Add 2 tsp Mustard Seeds (Rai). Add 2 tsp White Sesame Seeds (Safed Til). Add 1 tsp Asafoetida Powder (Hing). Add Few Curry Leaves. Add cut muthia and toss. Garnish with chopped Coriander. Enjoy this Super Healthy & Scrumptious Vegetable Muthiya.
