Hyatt Regency’s collaboration with United States Department of Agriculture that took place recently, was a gala affair serving up a selection of exquisite cocktails and a specially curated menu, celebrating American cuisine. Hyatt’s ‘Living Rooms’ was the chosen venue, that seemed every bit regal and fit for the event. The star players of the evening included the Turkey, that was flown in specially from the states. Same was the case with Northwest cherries, blueberries, cranberries, Washington apples, California walnuts, California almonds and California pistachios that were all showcased at the event and used in the special menu.

The Special American Menu

Coming to the menu that was set keeping in mind the American produce present at the event. From the turkey, to blueberries, walnuts to cherries everything was used to make a scrumptious, yet versatile fare. We started out with the lovely cranberry and pistachio Turkey roulade, which was a soft, rolled up pastry made with Turkey. The savoury pastry, with hints of cranberry and pistachio came with a mild sauce that balanced the dish. The salad, rolled up in a single Arugula leaf, the tuile and the microgreens added the much-needed freshness. The roulade was certainly the highlight of the event for us. It was followed by the warm and comforting cauliflower and apple soup, just perfect for the weather. The crunch of chopped apples truly made the soup worth writing home about. To cater to the Indian taste buds, a very interesting combination of blueberry and chicken malai tikka was also included in the menu. An impressive fusion we’d say. We rounded up the event with a spectacular warm apple pie, served with pistachio ice cream and fresh cherry tart.  The mine apple pie was perfectly baked with stuffing of minced apples, that paired so well with the refreshing scoop of pistachio flavoured ice cream. The cherry tart was a good attempt, we only wish the base of the tart was a tad softer.
