How To Make Sri Lankan Pol Roti

Follow the recipe to cook the perfect coconut pol rotis. 

Ingredients

  • 1 cup of all-purpose flour
  • ½ cup of coconut ( grated and unsweetened )
  • ½ teaspoon salt
  • ½ chopped red onion
  • 1 tablespoon fresh parsley
  • 1 tablespoon fresh coriander
  • Coconut oil for greasing the pan ( you can also use butter )
  • 1-2 green chilli
  • ½ cup of water

Method

  • Start with peeling and chopping the onions. Chop parsley, coriander and chilli.
  • Combine the all-purpose flour, grated coconut, salt, onion, parsley, coriander and 1/2 cup water in a bowl and mix well with your hands or a spoon. If the mixture is dry, add additional tablespoons of water and mix gently. ( The texture of coconut dough changes depending on how much shredded coconut you add to the flour ).
  • Gradually add water until a sticky dough forms. Keep kneading and form a soft dough. It should take less than 5-6 minutes.
  • Divide the ball into five or six small balls and let it rest for about 15 minutes.
  • Then add coconut oil to a frying pan. Lubricate your hands with oil, gently stretch the balls and roll them (with a roller or hands) so that they have the shape of a roti.
  • Put the roti in a hot pan and cook over medium to low heat for about 4-5 minutes.
  • Turn them over to make sure they have gold stains. Cover the pan with the lid and cook for about 3 minutes. Repeat the same process with other coconut dough balls.
  • Enjoy it with a hot curry.
