How To Make Chicken Red Sauce Pasta at Home

You must have eaten simple veggie pasta, but have you tried this chicken red sauce pasta? If not, then go for it right away. This Italian dish with a twist will be the perfect food to serve at your dinner table. Once you try it out, this delicious, and creamy pasta may become your favorite weekend delicacy. Ingredients:

  • 2 cups of pasta (uncooked)
  • 3 tbsp butter 
  • 1 tbsp olive oil 
  • 3-4 garlic cloves (minced)
  • 3 tbsp tomato puree 
  • ½ cup tomato sauce
  • ¾ cup heavy / whipped cream 
  • 1 tsp Italian seasoning 
  • 2 cups baby spinach 
  • Salt & pepper, as per taste 
  • Freshly grated parmesan/mozzarella cheese

For marination: 

  • 2 chicken breasts (cut in half, lengthwise)
  • 2 tbsp olive oil 
  • ¼ cup red wine vinegar 
  • 1 tsp oregano 
  • 1 tbsp garlic powder

Instructions:

  1. Boil the pasta. Add a few drops of oil and 1 tsp of salt to the water.  
  2. Meanwhile, keep chicken for marination. To do that, take a large bowl, add chicken (cut in half, lengthwise), olive oil, red wine, oregano, and garlic powder. Mix them well and keep in the refrigerator for 15-20 minutes. 
  3. Now take a skillet or saucepan to make the creamy tomato cheesy sauce. Heat butter and olive in a pan on a low flame. Add chopped garlic, saute it for 2-3 minutes, then add tomato puree and tomato sauce. Let them simmer for 5-7 minutes. do not forget to continuously stir it. 
  4. Heat olive oil in a pan. Once done, add marinated chicken and cook until it’s golden brown from both sides. Then, keep this aside. 
  5. Now coming back to the tomato puree, add Italian seasoning and spinach, nicely stir them. Let the sauce cook for about 5-6 minutes. 
  6. Add cooked chicken strips to the sauce and go for seasoning with some salt & pepper. 
  7. Add the drained pasta into it and add sauce. Toss well. (if the sauce gets too thick, add a splash of hot pasta water. 
  8. Add freshly grated parmesan cheese over it and garnish with the freshly chopped basil leaves. Serve immediately.

Note: 

  • You can serve the pasta with grilled garlic bread. 
  • You can also add your choice of veggies to this pasta. Recommended veggies are broccoli, onion, zucchini, baby corn, and bell peppers.
