Here's A Healthy Lasagna Recipe With Cottage Cheese And Spinach

Are you in the mood to have some cheesy dish? Then here is this vegetable lasagna is for you! Lasagna is a classic Italian dish, and its traditional recipe includes layers of noodles, red or white sauce, cheese, veggies, or meat. The varieties of lasagna are endless! You can switch up the veggies for meat. You can also combine the vegetables with paneer and mix some more Indian spices and flavours. 

Ingredients To Make Vegetable Lasagna:

  • 3 tablespoon spoon olive oil 
  • 3 medium carrots (chopped)
  • 1 each coloured bell pepper (chopped)
  • 1 medium zucchini (chopped)
  • 1 medium onion (chopped)
  • ¼ teaspoon salt 
  • 1 cup baby spinach

Ingredients For Tomato Sauce:

  • You can also substitute tomato sauce with 2 cups of marinara sauce 
  • 2 large tomatoes (puree)
  • ⅓ cup basil (roughly chopped for garnishing)
  • 2 tablespoon olive oil 
  • 4 garlic cloves (pressed and minced)
  • ½ teaspoon salt 
  • ⅓ teaspoon red pepper flakes 

Other Ingredients: 

  • 2 cups of cottage cheese (divided)
  • salt & black pepper (as per taste)
  • 200-gram noodles (boiled)
  • 2 cups of mozzarella cheese 

Instructions To Make Vegetable Lasagna :

  1. Preheat the oven to 180 degrees celsius.
  2. To prepare the veggies; take a large skillet, heat it with olive oil. Once it is heated, add carrots, bell peppers, zucchini, onion, and salt. Keep stirring and cook every couple of minutes until the veggies turn golden in colour, for about 10-12 minutes. 
  3. Add a handful of spinach and cook, frequently stirring till the spinach has wilted. Repeat for about 3 minutes and remove the skillet from the flame; keep the dish aside to set. 
  4. Now time to prepare the tomato sauce; in a bowl, pour tomato puree with the help of a mesh sieve for more fine puree. Add basil, olive oil, garlic, salt, and red flakes. Mix the mixture for about 7-10 minutes. 
  5. Now take a baking tray, grease it with olive oil, and layer it into layers.
  6.  Layer the bottom with tomato sauce and boiled noodles, now spread the cooked veggies, and the last add crumbled cottage and mozzarella cheese. And repeat the layers and end the top with crumbled cottage and mozzarella cheese. 
  7. Wrap a parchment paper or foil around the top of the lasagna. Bake until covered for 15 minutes, remove the cover, rotate the pan by 180°, and continue to bake for six more minutes until the top turns into spotty brown. 
  8. Once it is done, please remove it from the oven. Cook for 5-7 minutes. 

Slice and serve with sprinkled dry basil or flakes over the top.
