Give Your Coconut Ice Cream A Desi Upgrade With This Recipe

Coming from a family that lives for its cup of tea, I completely understand the ‘desi urge’ to add tea everywhere, from desserts to salads. The strong and aromatic tea leaves have a bold, unique flavour. Blended with complimenting elements, tea-based dessert can weave magic. Honestly, we feel chocolate and chai go very well together, but that is too standard ain’t it? Also, more often than not, the chocolate may mask the original flavour of chai. This is why, we are obsessed with this recipe of chai-coconut ice cream.

How To Make Ice Cream, And Make It Desi

If there’s anything we learned in lockdown is that there’s barely anything that you cannot whip up at home. All you need are some good quality ingredients, patience, and the right recipe. While making ice cream at home, that too a vegan one as this, here are a few tips you should keep in mind:  

  1. Measure the ingredients. Add some hot water to your tea, let it steep for at least 3-4 minutes. Take the bag out.
  2. Then add the coconut milk to tea, whisk it together nicely with tea, vanilla, honey, spices and salt. And this is how you make your vegan chai. Make sure the coconut milk is very nicely mixed and there should be no bits floating on top. To prevent the same, you can heat the mixture on medium heat.  
  3. If you have arrowroot starch, then add it to the mixture, this would save you a lot of time that you are going to spend chilling the tea mixture and ‘firming it up’.
  4. After adding the starch, let the tea cool at room temperature. Transfer the mixture in a bowl and place it in the refrigerator and wait till it is thoroughly chilled
  5. Now using arrowroot starch saves you time in the chilling process, but there is also a weird layer that forms on top of the mixture. Once the mixture is refrigerated, scoop out this layer, mix up everything one last time, then pour it in the ice cream maker and freeze. If you like it soft and velvety, you need not chill it for more than 5 hours.
