Give Your Desserts A Korean Upgrade With This Bingsu Recipe

Summers can be pretty harsh and unbearable, there's no other delicious way to keep us cool than indulging in some summer desserts. And when it comes to pure summer indulgence, nothing can really beat the satisfaction of gorging on a bowl of ice-cream. 

We have all tried our favorite range of ice-creams from classic vanilla to our good old chocolate ice-cream but eating the same desserts every summer can be quite boring. So, this is the time when you need to make the most of seasonal fruits and stay hydrated. And what better way to do that than to use fresh, seasonal produce? 

Bingsu is the most popular summer dessert in South Korea. Traditionally this unique dessert is made up of finely shaved ice, condensed milk, seasonal fruits, small pieces of tteok (rice cake), chewy jelly bits, fruit syrup and red beans. Usually, this dessert is made with help of shaving equipment but we have brought you an easy, home-made recipe that you will definitely like to try.

Ingredients Ice-Shaving

  • 1 cup milk
  • 2 tbsp sweetened condensed milk

Ingredients Toppings

  • 2/3 cup of frozen berries
  • 2 tbsp of caster sugar
  • Seasonal fruits (cubed mango, strawberries, pomegranate, watermelon, kiwi) 

Prepare Ice-shaving:

1. Mix the milk and sweetened condensed milk in a bowl. Pour out the milk mixture onto an ice tray, and freeze it until it becomes ice-blocks.

2. Then take out the ice-blocks and put them into a food processor in batches.  Grind the ice for at least 20 seconds or until it is smooth in texture (like snow).

Prepare Toppings:

1. Take a saucepan and heat the berries over medium-flame heat to make berry syrup. Also add 3-4 tbsp of water for the better texture of the syrup.

2. Once the berries start to simmer, stir in the sugar until completely dissolved and mash the berries with a spoon until syrupy.

3. Strain through a sieve and leave aside to cool.

Assemble Bingsu:

1. First fill the bowl with the milk ice-shavings and then pour the syrup on top of it. 

3. Add your favorite cubed fruits.

That’s it, your unique summer dessert is ready to be eaten.
