Ingredients:

For Idli Batter:

  • 2 cups of parboiled rice
  • 1 cup whole urad dal
  • Water for soaking and grinding
  • Salt to taste

For Podi:

  • 1/4 cup chana dal
  • 1/4 cup urad dal
  • 2 tablespoons of sesame seeds
  • 4-5 dried red chillies
  • 1/2 teaspoon asafoetida
  • 10–12 curry leaves
  • Salt to taste

For Ghee Podi Idli:

  • Idli batter
  • Ghee
  • Podi
  • Salt to taste

Method:

  • Separately, wash the urad dal and parboiled rice.
  • Soak them for four to six hours, or overnight, in water.
  • After draining the water, pulse the rice and urad dal separately, adding a little water as needed, until a smooth paste is achieved.
  • In a big bowl, combine the batter for the urad dal and pounded rice. To taste, add salt and thoroughly blend.
  • Let the batter ferment for eight to ten hours, or overnight if possible, until it doubles in volume and starts to get somewhat fluffy.
  • Heat a pan over medium heat and dry roast chana dal, urad dal, sesame seeds, dried red chillies, asafoetida, and curry leaves separately until they turn golden brown and aromatic.
  • Let the roasted ingredients cool down completely.
  • Grind the roasted ingredients, along with salt, to a coarse powder. This is your podi.
  • Grease the idli moulds with a little ghee.
  • Pour the fermented idli batter into the moulds and steam until the idlis are cooked and firm. This usually takes about 10–15 minutes.
  • Once the idlis are cooked, remove them from the moulds and place them in a serving dish.
  • Drizzle melted ghee generously over the idlis.
  • Sprinkle the prepared podi evenly over the ghee-coated idlis, covering them completely with the flavourful spice powder.
  • Your homemade ghee podi idlis are ready to be served.
  • Enjoy them hot with coconut chutney, sambar, or any other accompaniment of your choice.
