Not only are they packed with nutrition, but they're also easy to make and are sure to satisfy your sweet tooth without any guilt! Moreover, if you've never baked with almond butter before, now's your chance! This recipe for almond butter cookies is a great place to start as it is rich, creamy, and nutty, just like peanut butter, making it ideal for baking.

The cookies are flourless, which is ideal for any baker who frequently runs out of flour and is also healthy. You might be wondering how healthy they are. Well, the exclusion of flour means you consume fewer carbs and less sugar. And since there is no flour and almonds have no gluten, flourless cookies are also a great option for those with gluten sensitivity.

This recipe does not include any nuts or fruits, but you can definitely add them to give them a fresh take. Fruits and nuts like cashews, almonds, walnuts, and pistachios can be added, along with coconut, cherries, raisins, blueberries, and many more. But the best part is that you can use peanut butter or cashew butter in place of almond butter too, as they will have a similar texture and flavour to the cookies. There are no restrictions; you can mould this recipe in any way you want with add-ons of your preference. But you have to be mindful of the cooking times, as they might differ depending on different butters. But whichever butter you choose, the cookies will definitely come out delicious, exactly the way you want (and those chocolate chips really help).

Here's how you can make these almond butter cookies at home:

 ½ cup chocolate chips

 1 large egg

 250 g almond butter

 1 teaspoon vanilla extract

 100 g of brown sugar

 1 teaspoon baking soda

Preheat the oven to 350 degrees Fahrenheit (180 degrees Celsius). Set aside two large baking sheets lined with parchment paper or silicone baking mats.

Mix together the almond butter, brown sugar, egg, vanilla extract, and baking soda in a large mixing bowl until well combined. Add the chocolate chips and continue mixing until the chocolate chips are completely combined.

Scoop the cookie dough onto the prepared baking sheets using a 1.5-tablespoon biscuit scoop. Make sure to leave some space between each ball of biscuit dough because they will spread while baking.

Bake the cookies for 9 to 12 minutes, or until the tops of the cookies are set and firm. Remove the cookies from the oven and cool them completely on the baking sheet.
