Legend has it that Keshavji Gabha Chudasama improvised the recipe to cater to the taste preferences of the mill workers and traders in Mandvi. He combined leftover roti (Indian bread) with a spiced potato filling, chutneys, and various toppings to create a unique and delicious snack. The dish gained popularity rapidly and soon became a staple street food item in Gujarat.

Dabeli's unique flavour profile, blending sweet, tangy, and spicy elements, along with the satisfying textures of crunchy sev, roasted peanuts, and pomegranate seeds, contributed to its widespread appeal. It quickly spread to other regions of Gujarat and eventually became popular across India.

Dabeli, involves a simple yet delightful process. It begins with preparing a spiced potato filling, where boiled potatoes are mashed and sautéed with a flavorful blend of spices, such as red chilli powder, turmeric, and roasted cumin. The filling is then stuffed inside a soft pav (bun) that has been lightly buttered and toasted. To enhance the taste, a tangy and spicy tamarind chutney and a garlic chutney are generously spread on the inside of the pav. The stuffed pav is then topped with a garnish of crunchy sev (chickpea noodles), roasted peanuts, pomegranate seeds, and fresh coriander leaves. The final touch is a sprinkling of aromatic chaat masala for an extra burst of flavour.
