Cucumber Sushi Roll: Filled With Fresh Veggies

Almost everyone in most nations has tried Sushi at some point in their life. It delivers a flavourful and distinctive taste bud experience that is unlike anything else, whether we couple it with a glass of wine or a cocktail. The juicy fish tastes wonderful and is one-of-a-kind when paired with sauces, rice, and other dishes. One can easily locate a sushi restaurant anywhere in the world, therefore it is understandable why sushi has grown to be one of the most popular cuisines in the world during the past century. One such out of the box and very simple to make sushi are these Cucumber Sushi Roll.This cucumber sushi will quickly become one of your favourite additions to your sushi platter because it is crunchy, hydrating, and loaded with vegetables. Although it may not be "traditional sushi," it is still quite delicious!

Even though it seems difficult, it's actually very simple to make.  Simply hollow out the cucumber's centre until you have a long, narrow tunnel there. Then fill it with stuffing. After stuffing it, slice the cucumber into 1-inch-thick slices lengthwise, exactly like you would for a standard sushi roll, and serve.

  • 2 Cucumbers
  • 1 Cup uncooked sushi rice 
  • ½ Firm avocado sliced
  • ¼ Red bell pepper sliced
  • ¼ Orange bell pepper sliced
  • Optional : Julienne sliced carrots, red cabbage, tofu, sprouts, or scallions
  • Spicy Mayo
  • 3 Tbsp Mayonnaise 
  • 1 Tbsp Sriracha 

Instructions to make Cucumber Sushi Roll:

  • Cook the rice in accordance with the directions on the package
  •  Don't stir the rice when it is done cooking; let it cool, this will make the rice more stickier to keep and hold everything together
  • You can flavour it with rice vinegar, sweetener, & salt (per each 1 cup of uncooked rice, use 2 tablespoons rice vinegar, 1 teaspoon sugar, and 1 teaspoon salt)
  • To make a long, hollow tube, cut every cucumber in half, then use a tiny spoon or knife to remove the seeds
  • The chunks that were scooped out can be utilised to make tzatziki or a cucumber smoothie as we won't be using them in this recipe
  • In the cucumber that has been hollowed out, add a tiny amount of rice, making sure it goes through the entire cucumber
  • Using a little knife, compress the rice toward one side of the tube
  • Add a slice of avocado and a couple slices of pepper before compressing and adding extra rice to fill in any gaps until the cucumber is completely packed
  • Slice the cucumber into 1 to 2 inch thick pieces using a sharp knife
  • As you cut, check to see if the filling is loose; if it is, add more rice and peppers as necessary

Serve with your preferred wasabi, pickled ginger, spicy mayo, and soy sauce accompaniments for sushi.
