This Indian pancake comprises a batter with primary ingredients such as flour and khoya, then deep-fried in desi ghee. Before serving, they are constantly dunked in sugar syrup and enjoyed. Ace the art of making restaurant-style malpuas at home by simply following the three tips and tricks we have shared below. 

1. Add soda for fluffiness

The simple trick to add fluffiness to your dishes is simply adding a soda pinch into the batter. Then, follow the same while whisking the batter.

2. Constantly whisk a thick batter

Getting a perfect batter with the right consistency is necessary if you want restaurant-style malpuas at home. First, whisk a batter of medium thickness. It should neither be too thick nor delicate or light.

3. There should be 1-string consistency of sugar syrup

The thickness of your syrup must be one string. If the right consistency is not achieved, your malpuas will not be evenly coated, and they won’t absorb the syrup well too. Also, soon after deep-frying your malpuas, dunk them in sugar syrup for at least 10 minutes. Leaving them in the sugar syrup for a longer time helps better absorption.
