As the rain hits, lowering the overall heat, the fragrance of freshly roasted corn or corn bhajjis takes over most Indian kitchens. If experimenting with corn with every rain shower is your thing, this is your sign to move over the crispy bhajjis and try your hand at making chatpati and spicy chaats.
While the classic corn chaat with sweet corn kernels mixed with chopped veggies is always a hit, Slurrp interviewed the Home Chef, Sanika Renuke, for her specially curated corn-based recipes. “Whether boiled or roasted, just add some masala, chutney, maybe a bit of lemon, and it’s ready in no time,” she describes her ready-to-serve recipes. “Here’s my twist to help you elevate this humble chaat into something you can serve guests or enjoy as a monsoon indulgence.”
Dahi Papdi Corn Chaat
Ingredients:
- 1 cup boiled sweet corn
- ¼ cup chopped onions
- ¼ cup chopped tomatoes
- A handful of chopped coriander
- A pinch of chaat masala
- ½ cup whisked curd
- 5–6 crushed papdis
- Green chutney & tamarind chutney
- Roasted cumin powder
- A pinch of sugar in the curd (optional)

Instructions:
- Mix corn, onions, tomatoes, coriander, and chaat masala. Add crushed papdi.
- Pour over sweet curd. Drizzle both chutneys.
- Sprinkle roasted cumin powder.
- Garnish with coriander leaves and serve immediately.
Masala Moongfali Corn Chaat
Ingredients:
- 1 cup boiled corn
- A handful of roasted peanuts
- 1 chopped green chilli
- ¼ cup chopped onions
- Red chilli powder + black salt
- Lemon juice as required
- Chopped coriander

Instructions:
- Roast peanuts (add a pinch of hing if you like).
- Toss together corn, onions, chilli, and peanuts.
- Add spices and lemon juice.
- Garnish with coriander and enjoy.
Tadka Corn Chaat
Ingredients:
- 1 cup boiled corn
- ¼ cup chopped onions + tomatoes
- 1 tsp ghee
- Mustard seeds, chopped garlic, and curry leaves for tadka
- Salt, turmeric, and lemon juice to taste
- Fresh coriander for garnish

Instructions:
- Mix corn with onions and tomatoes.
- In a tadka pan, heat ghee and add mustard seeds, garlic, and curry leaves.
- Pour the hot tadka over the corn mixture.
- Add turmeric, salt, lemon juice, and coriander. Serve the spicy chaat.
Corn Bhel Puri
Ingredients:
- 1 cup boiled corn
- 1 cup puffed rice (murmura)
- Chopped onions, tomatoes, and green chillies
- Sev and crushed papdi as required
- Green and tamarind chutneys
- Chaat masala

Instructions:
- Combine corn with chopped vegetables.
- Add murmura, sev, crushed papdi, and chutneys.
- Sprinkle chaat masala and mix right before serving.
