This super-delicious coconut drink is a part of Goan, Konkan, and Malvani cuisine. It is served as an appetizer in the coastal regions. Some have it with rice too. Whatever way suits you, go for that. Ultimately, you are going to reap its benefits. To prepare this drink, you need to soak kokum in asafoetida water for a few hours. Then add coconut milk to it and Voila!

Cucumber And Coconut Gazpacho

Both cucumber and coconut boast cooling properties and are perfect food for summers. What can be better than their amalgamation to have to get rid of the summer woes? To prepare it, you need 2 cups of chopped cucumbers, 1 cup of coconut milk, 1 tsp of chopped mint leaves, and salt to taste. Mix them all nicely and refrigerate. Serve cold. 

Mango Coconut smoothie

This tropical shake requires 200 ml coconut milk, 4 tbsp coconut milk yogurt, a banana, 1 tbsp ground flaxseed, pumpkin seeds each, and 120 g frozen mango chunks. Blend them and serve cold.
