What comes to mind while thinking about a cake? A moist, tender, crowd-pleaser and everyone's favourite. Today, we share a cake recipe full of rich chocolate flavour, made with some pistachio instant pudding. There is something so perfectly balanced about this cake as it’s not too chocolatey or rich and not aggressively artificially flavoured. It’s sweet enough with a simple chocolate glaze and a garnish of crushed pistachios that gives a gorgeous dessert worthy of gracing your table. Whether it’s a birthday or a special celebration, this cake's aroma and taste are perfect for every occasion.

Chocolate Dacquoise 

  • Ground Almonds – 400Gms 
  • Icing Sugar – 100Gms 
  • Callebaut Cocoa Powder – 50Gms 
  • Egg White – 400Gms 
  • Sugar – 300Gms 
  • Total – 1250Gms

Procedure: 

  1. Sift ground almonds with icing sugar and cocoa powder
  2. Whip egg whites and add in a sugar 
  3. Lightly wrap the meringue into the dry ingredients mix

Pistachio Cream

  • Butter – 180 gms 
  • Sugar – 200 gms 
  • Ground almonds – 200 gms 
  • Eggs – 200 gms 
  • Flour – 40 gms 
  • Vanilla extract – 5 gms 
  • Pistachio paste – 45 gms 
  • Total – 870 gms 

Procedure: 

  1. Paddle mix sugar and butter until sandy. 
  2. Next, add in ground almond, flour and pistachio paste. 
  3. Next, add in eggs and vanilla essence. 
  4. Lastly, pour in a piping bag. 

Special Butter to Grease 

  • Butter – 300 gms 
  • Flour – 100 gms 
  • Sliced almonds – 300 gms 
  • Total - 700 gms 

Procedure: 

  1. Cream butter and flour until creamy texture. 
  2. Cover the mould with special butter and sprinkle sliced almonds. 
  3. Pipe the chocolate dacquoise in the middle of the pipe and add a big sausage of pistachio cream. 
  4. Cover again with chocolate dacquoise and bake at 160°C for 45mins. 
  5. Unmould, cool it down and glaze with neutral glaze.
