Chef Saransh Goila Shares His Mother’s Macaroni Ki Sabzi Recipe, Seen It Yet?

Opening your tiffin box to desi macaroni was a joy unparalleled in school days. You were treated as royalty, your friends were extra kind to you the whole day. If that is not the definition of supreme power, we don't know what is. Macaroni, for the unversed, is a kind of a pasta that look like curved, narrow tubes. They can be tossed in a variety of sauces, but in India we seem to have given it our own makeover. Desi macaroni is nothing but macaroni cooked in a pool of spices that are also a regular feature in our curries. Expect a lot of ginger, onion and garlic too, for we like our desi macaroni to be hot. Celebrity chef Saransh Goila who often shares a bunch of cool recipes on Instagram, took to the photo-sharing site to share one of his mother's recipe this time, which is essentially desi macaroni only, but cooked in a way that it’ll remind you of your favourite sabzi.  

Making Desi Macaroni

To make this macaroni, in a pan you need to sautee 1.5 tbsp olive oil, 1 tbsp chopped garlic, 1.5 tsp ginger, 2 chopped onions. Sautee it until everything turns golden. Then add 2 green chillies, 1 tsp chilli powder, ¼ tsp turmeric powder and 4 tbsp tomato puree. Sautee tll tomato leaves oil. Add three cups of boiled macaroni and half a cup of left-over boiled pasta water. Mix well. Then add salt, ¼ tsp garam masala, ½ cup chopped coriander. Serve hot.

 

Saransh Goila who is best known for his much-famed Goila Butter Chicken has been very vocal about is love for desi food especially on Instagram. Remember the time he gave us the viral hack of making pasta out of papad? If you haven't seen the original reel that has crossed more than 1.8 mn plays, then you may have seen several other reels with Saransh’s audio where people were recreating pasta using papad. All you needed to do was cut papad in thin strips, boil them in water, strain and cook them with olive oil, chilli flakes and garlic. And there it was, your own papad aglio olio!

Interestingly, there were many food trends that celebrated our love for desi food this year. Reels made on Baba Sehgal’s Rajma Chawal and Gol Gappy Tussi Khaya Karo, which is a reprised version of Baage Vich are proof.
