Now most of us are aware that French Fries are not from France, but have you ever tried giving it an Indian twist? I know I have paired it with Pudina chutney a lot of times (highly recommended), and looks like chef Ranveer Brar is also vouching for the ‘desi potential’ of the classic potato snack, for why else would he use them to make a ‘chaat’? For the uninitiated, chaat is a class of Indian snacks renowned for its sweet, salty, spicy, tangy flavour along with its signature crunch.  

For this chaat, he doesn’t simply toss the French fries with chutney and dahi. For this chaat, he first makes the trending ‘Blooming potato’, or a potato with a sturdy base with several little cuts made on top that make it resemble a flower. He also shared some valuable tips and tricks to make blooming potatoes,  

How To Make Blooming Potato: Tips and Tricks  

  1. Take frying potatoes, make sure when you are slicing it, you do not cut it through the base. For this, when you are cutting the potatoes, chop off the sides of the potato to make a cube. Place the cube in the centre of two chopsticks/ pencils or any sticks and start slicing. Run your knife until you reach the sticks and that’s it. Do not run it deeper.  
  2. Dip the potato in water and remove the starch, before you deep fry the potatoes.  
  3. Rub the potato in cornstarch, it should reach every corner of the potato. Dust off the extra cornstarch.  
  4. When you are frying the potato drop the portion where you have made the cuts first.

The real magic starts when he starts assembling the chaat. For that you need to take some crispy fried potatoes (which he fried separately), then land some mayonnaise and tomato ketchup on top, followed by oregano, chilli flakes for seasoning. Then add grated cheese. After this, place the blooming potato right in the centre, add chilli flakes grate more cheese on top, a drizzle of mayonnaise is not a bad idea, then you can also add a pinch of red chilli powder. Finish it off with a few fresh sprigs of coriander. For what is a chaat without coriander, right?
