Chef Ashish Singh Shares His Summer Special Mango Recipes

Mangoes are the most beautiful gift of the summer. In this season of scorching heat, this juicy and yummy fruit gives us a reason to be cheerful. Widely popular as the "king of fruits, mangoes are loved by people of all ages across India. Available in different shapes and sizes, there are many varieties of this summer delight. Some popular ones are Alphonso, Langra, Kesar, Raspuri, Chaunsa, Totapuri, Dasheri, and Himsagar.

Mangoes are not only delicious in taste but are also packed with various vital nutrients such as vitamin C, folate, minerals, and antioxidants. According to Healthline, this tropical fruit is beneficial for supporting heart health, the digestive system, and boosting immunity. Apart from eating them directly, mangoes are also relished in the form of smoothies, ice cream, phirni, curry, chutney, and cocktails.

But if you are looking for some more delightful mango dishes, here are two recipes shared by Chef Ashish Singh, Corporate Chef, Café Delhi Heights, Delhi. Mango can be used with salty and sweet flavours both, the versatality of Mango adds sweet texture when used with desserts, and when used in pizzas, curries- it adds unique flavours and balances the flavours.Hence we are making quite a lot of dishes with Mango." 

Mangolicious Pizza 


  • 1 large pizza base             
  • 100 g of pizza sauce
  • 80 g pizza cheese, grated        
  • 10 ml of balsamic vinegar
  • 150 g mango chunks
  • 50 g rocket leave
  • 10 ml of olive oil
  • 2 g of salt
  • 1 g of crushed black pepper


  • Take a pizza base and spread pizza sauce on it with a spoon. Sprinkle cheese on it, and then bake it in the oven for 5 minutes until the cheese becomes golden brown.
  • Meanwhile, in a mixing bowl, mix salt, pepper, olive oil, and balsamic vinegar. Add rocket leaves as well.
  • Take the pizza out. Cut the slices into eight pieces. Keep a few mango chunks on each slice of pizza, then keep the rocket salad in the centre of the pizza. Serve hot.

Mango Chicken Salsa Verde


  • 200 g of chicken breast
  • 100 g of mango diced
  • 5 g salt
  • 2 g of crushed black pepper
  • 30 g of chopped garlic
  • 20 ml of olive oil
  • 5 g thyme, chopped
  • 100 g of grilled vegetables
  • 100 g mashed potato
  • 300 g of cooking cream
  • 30 g of butter
  • 20 g parsley, chopped


  • Marinate chicken breasts with salt, pepper, thyme, salt, and garlic. Keep it aside for some time.
  • Heat the frying pan. Add olive oil and chicken breast. Grill them for a minute each. The pan should be covered.
  • In another saucepan, heat oil. Add garlic and sauté for some time. Add butter, cream, salt, pepper, and parsley. At last, add diced mango.
  • Take a plate, keep preheated grilled vegetables on one side, and keep mashed potatoes in the centre. Keep the grilled chicken breast on mashed potatoes and pour the hot sauce on the breast. Garnish with chop parley. Serve hot.
