Singhare Ki Barfi

To make this delicious vrat dish, heat up some ghee, add in the singhare ka atta and sauté until it turns light brown. Then, in a separate bowl, dissolve some jaggery in warm water to make a sweet syrup. Pour this jaggery syrup into the pan with the flour and stir constantly.
Let it cook for a few minutes, then mix in cardamom powder, raisins, almonds, and pistachios. Cook for another minute or two. Transfer to a plate, let cool and cut into squares or diamonds. Garnish with pistachio slivers and enjoy during the Navratri fast!

Vrat ki kadhi uses singhare ka atta, or water chestnut flour, to thicken it since that ingredient is permitted during fasts. The gravy is light and creamy from the yoghurt and singhare ka atta, with spices like cumin, coriander, and often curry leaves infused into it. It is often served with sabudana or boondi mixed in it and vrat ki puris.

Next, stir in the almond powder and cook for 2 more minutes, adding more ghee if the mixture seems dry. Gradually pour in hot water while stirring constantly to prevent lumps from forming. Once the water is fully incorporated, mix in the sugar and cook until dissolved. Finally, add dried fruits and cardamom powder. Cook for one more minute, then remove from heat.
