Celebrate This Independence Day With Tricolour Quinoa Salad

It is not the easiest task for vegetarians to look for good sources of protein. Unlike animal protein, most plant-based proteins are not considered ‘complete’, since they do not contain all the nine essential amino acids. However, it may delight you to know, that it is not true. You heard us, there is one plant-based source of protein that is considered a complete source, and it has also become a superfood for weight-loss, heart health, skin and more. We are talking about quinoa. 

Quinoa is a flowering plant in the amaranth family. It is grown and cultivated mostly for its seeds that are a tremendous source of protein. Quinoa is a very versatile food that can be used to make many kinds of salads and fillies. You can also use it in risotto, pasta, and sandwiches for a filling meal.

Since more and more Indians are pledging toward a healthier life, it is only fair that we ring in the holiday with the most healthy salad. And guess what, to capture the essence of the momentous occasion, this salad comes in three shades of the Indian flag - saffron, white, and green.  

Without further ado, here is the salad recipe you had been waiting for. This salad by Organic India is loaded, filling and so delicious. Since it is so rich in protein, you will be satiated after having it, which will prevent overeating and excessive calorie intake. Protein also helps boost the health of your skin and nails. So, all the more reason to make quinoa, your best friend.  

Ingredients:

  • 1 tbsp honey 
  • 100 gm cooked quinoa 
  • 100 gm whole moong sprouts 
  • 2 tsp apple cider vinegar
  • Rock salt to taste 
  • 50 gm small cut cottage cheese cubes 
  • 50 gm chopped red bell pepper 
  • 50 gm chopped green bell pepper 
  • 50 gm onion
  • 2 tsp olive oil

Method:

  • Take apple cider vinegar, oil, honey, salt to taste in a bowl and mix it well together. 
  • On a plate, mix cooked quinoa, moong sprouts, cottage cheese, and chopped salads together and the above mixture well.
  • The high-protein, fibre, and alkalizing salad is ready to serve.
