Pre-Christmas prep or post-New Year detox, nutritionist and Cordon Bleu-trained chef Ishti Saluja has 10 quick and healthy one-bowl-meal recipes for you to try. This is BYOB — Build Your Own Bowl — with Ishti, daily on Slurrp.

BOWL 1: KALE QUINOA

Ingredients: 

Quinoa | Edamame | Apple | Parmesan cheese | Pumpkin seeds | Kale

For the dressing: 

Mustard | Olive oil | Maple syrup | Lemon juice

Method: 

Boil the quinoa and sauté the edamame. Season with a little salt. 

In a small bowl, mix together the ingredients for the dressing. Adjust the quantities as per taste. 

In a deep platter or bowl, arrange the kale, cooked quinoa and edamame. Drizzle the dressing all over. Top with apple slices, Parmesan, and pumpkin seeds for that extra crunch.
