BOWL 1: KALE QUINOA
Ingredients:
Quinoa | Edamame | Apple | Parmesan cheese | Pumpkin seeds | Kale
For the dressing:
Mustard | Olive oil | Maple syrup | Lemon juice
Method:
Boil the quinoa and sauté the edamame. Season with a little salt.
In a small bowl, mix together the ingredients for the dressing. Adjust the quantities as per taste.
In a deep platter or bowl, arrange the kale, cooked quinoa and edamame. Drizzle the dressing all over. Top with apple slices, Parmesan, and pumpkin seeds for that extra crunch.
