Breakfast Tacos For The Best Hangover Brunch

If there is anything to swear by in history, it is that nothing is as forgiving during a hangover, as much as a greasy breakfast of eggs, sausages and some carbs to load up on. As supporters of the big breakfast club, we believe that breakfast must be extra special everyday, it is particularly important to eat a solid meal after chasing shots and dancing all night. While the dream hangover breakfast is typically anything that is greasy, loaded with cheese, includes lots of bread and can be put together pretty quickly; a factor that makes all English breakfasts such a huge hit.

Unlike making a typical diner breakfast, these tacos are edible vessels – in that, they are the plate and the edible element within which delicious eggs, sausage and a surprise kick from the hot sauce await. They’re much simpler to make as you can simultaneously keep an eye on everything, as they cook/warm up. What we think, is the best part of the breakfast taco experience, is to be able to enjoy every flavour in each bite, right until the end. And as promised, like every other breakfast on a Sunday should be, this one is equally nap-inducing.

  • 3 flour tortillas
  • 3 eggs
  • 2 links chorizo (or any spicy sausage)
  • 2 rashers bacon (optional)
  • ½ tomato, sliced
  • 3-4 tablespoons grated cheddar
  • 1 tablespoon milk
  • ½ avocado, sliced
  • Salt and pepper to taste
  • Hot sauce of choice

Method

  • Warm up the tortillas on a sheet pan in the oven for 5-10 minutes. Make sure that they do not get too crisp, in case that might make it difficult to fold them while eating.
  • Add the milk to the eggs and whisk well. Season with salt and pepper and scramble the eggs, cooked in some butter.
  • Add the bacon to the same pan, once the eggs have been removed and set aside and allow the rashers to render fat. Cook the bacon until crispy and chop into bite-sized pieces.
  • Remove most of the bacon fat and slice the sausages lengthwise, to sear them in the same pan until they are a caramelised brown on all sides.
  • To assemble the taco, add the eggs, chopped bacon and sausage followed by the grated cheddar cheese. Top up with the sliced tomato, avocado and a few dashes of hot sauce. Eat when still warm.
