Ingredients

For the Blueberry Syrup

  • 400 gms Blueberries
  • 2 cups Water divided
  • 2-3 Small pieces of Lemon Rind
  • 2 cups Sugar
  • 2-3 tbsp Lemon Juice

To Serve

  • Sparkling Water/Club Soda

Method 

  • Begin by washing the blueberries with cold water and draining them. 
  • Next, create the sugar syrup by combining 1 cup of water and 2 cups of sugar in a medium-sized saucepan. 
  • Heat the mixture over medium heat until the sugar is fully dissolved, then bring it to a boil. Remove the saucepan from the heat and allow it to cool to room temperature.
  • While the sugar syrup cools, combine the blueberries, 1 cup of water, and lemon rind in another medium-sized saucepan. 
  • Bring the mixture to a boil, then reduce the heat and let it simmer for approximately 20 minutes or until the blueberries are fully cooked. 
  • Remove the lemon rinds and strain the blueberry mixture using a muslin cloth or large sieve.
  • After both the sugar syrup and blueberry mixture have cooled completely, mix them together by combining the sieved blueberry mixture, 2-3 tablespoons of lemon juice, and the sugar syrup.
  • Stir the mixture thoroughly to ensure it is well combined.
