Almond Cookie Recipe, A Fibre-Rich, Healthier Way To Indulge

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup coconut oil, melted
  • ¼ cup pure maple syrup or honey
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract
  • Sliced almonds for topping (optional)

Method:

  • Preheat your oven to 175°C and line a baking sheet with parchment paper.
  • In a medium-sized bowl, whisk together the almond flour, coconut flour, baking soda, and salt until well combined.
  • In another bowl, mix the melted coconut oil, maple syrup or honey, vanilla extract, and almond extract until smooth.
  • Gradually add the wet ingredients to the dry ingredients, stirring well until a thick dough forms.
  • Scoop about one tablespoon of dough and roll it into a ball. Place the ball onto the prepared baking sheet, and repeat with the remaining dough, leaving some space between each cookie.
  • Flatten each ball slightly with your palm or the back of a fork. If desired, top each cookie with a few sliced almonds for added crunch.
  • Bake for 10-12 minutes, or until the edges turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
