A Must-Try Vegetarian Spanish Paella You Can Try At Home

Have you ever tried Spanish Paella? Well, here’s your chance to enjoy one within the comfort of your home. Paella is a traditional rice dish of Spain that has an appearance similar to biryani. A dish that has held a special place in the hearts of Spanish people for centuries and having gained so much popularity worldwide, there has to be something special about it. Don’t you think? When we delve into it, Paella is a rich dish that is prepared combining vegetables, chicken and seafood together and infused with herbs. Paella carries a little twist of wine into it, which enhances its taste and aroma. Moreover Spanish households make use of a special pan designed especially for this traditional dish

Here’s the vegetarian Spanish paella recipe with some Indian variations.

Ingredients- ( serving for 3)

  1. 1 big bowl of rice
  2. 2 cup water
  3. 100g corn
  4. 100g cauliflower
  5. 100g baby corn
  6. 100g carrots
  7. 100g cucumber
  8. 100g green peas
  9. Bay leaves
  10. Garlic Cloves
  11. Garam masala
  12. 20 ml white wine
  13. 4 tablespoon Olive oil
  14. Parmesan cheese
  15. Parsley / Coriander leaves
  16. All colored Bell peppers
  17. 2 onion
  18. 10-12 Saffron threads
  19. Salt as per taste

Method-

  1. Take a huge flat pan and add two tablespoons of olive oil. First add bay leaves and then garlic cloves. Keep adding other ingredients such as black pepper, salt, chopped onion and parboiled vegetables.
  2. Bring the mixture to boil then add white wine. Saute the mixture for a while.
  3. Meanwhile in a big bowl add boiled water and put some saffron threads into it and leave it untouched for sometime.
  4. At the end add boiled rice into the mixture of vegetables and masalas. Saute again and pour remaining olive oil.
  5. For consistency, add water and let the rice cook. Cover the pan with a lid and leave it to cook on medium flame for 10-15 minutes.
  6. Do add parmesan cheese over the top.
  7. Ta da! Vegetarian Spanish paella is ready.
  8. Garnish with fresh parsley or coriander leaves ( according to availability)

Note- In case you wish to make non-vegetarian Paella, add chicken and seafood.
